Spicy Paratha

This is very delicious and spicy recipe. green chillie is the main ingredient which make feel of its taste of spicy


Ingrdients:-

For making dough

Besan ( Gram flour)-250 gm

Onion- 2 medium size (finely chopped)

Green Chillie-4 to 5 pc. (finely chopped)

Salt- 2 tbl spoon

Curd (Dahi)-100 gm

Water-1 to 2 cup

For dusting:-

Rice flour- 1 Big Spoon

For fry:-

Ghee/  Refined Oil- 100gm

Procedure:-

      * First of all take a big bowl and take all above the ingredients and make it's dough.

      * Then left it aside for about half an hour. Then make equal balls of it like big lemon size.

       * Then rolled out each and every ball  with applying rice flour dust on a wooden board in the round shape like a roti or chappatti.

       * Then take a pan and heat it on medium flame of gas and  put one of your rolled ball and flip it after 1 min. 

        * You will see little golden brown color on it.   

      * Then apply ghee or refined oil to it on both side by flipping it. 

      * When golden brown color will see on both side then understand that your spicy paratha is ready. 

       * Serve  it hot with pickle. Enjoy it with family and friends. It will be really the momemt of joy.

Daal Puri (Stuffed Bread with Spiced Bengal Gram )

 It is delicious and spicy stuffed bread with taste of Bengal Gram which is usually cooked in north Indian Kitchen at special occasion or festival time. 




Ingredients for stuffing :-                      For 4 to 5 person

Chana Daal (Splitted Bengal gram)- 200gm

Green Chillie (finely chopped)- 3 table spoon

Garlic(Finely grated) - 1/2 table spoon. 

Ginger (Finely Grated) -  1 table spoon

Black Pepper (Crushed)- 1/2 table spoon

Salt- 1 table spoon

Dry Coconut - 1/2 table spoon

For Dough :-

Wheat Flour- 4 big Spoon

Ajwain (Carom) Seeds- 1 tea spoon

Salt-1/2 tea spoon

Water- 50ml

Ghee- 1 table spoon

Eatable Soda- 1/4th tea spoon

For cooking :-  Mustard Oil/ Refined Oil- 200 ml

Procedure:-

Stuffing material :-                      Time- 15 to 18 min.

       First of all clean and wash the Daal  and soaked in water for 5 mins. Now cook it in pressure cooker upto 4 to 5 whistles on medium flame of gas. Now leave it for 5 mins. and drain all water from it. Now put cooked Daal in a separate  big bowl and set it aside. Now add finely chopped green Chillie,  chopped garlic, ginger to this bowl of cooked Daal. Now add crushed black pepper, salt and grated dry coconut to it. Mix all these ingredients well and leave it separate. 

Dough Preparation :-                    Time- 3 to 4 min.

        Dough preparation is an art which is easy to learn. First take a separate big bowl and put Wheat flour to it. Now add Carom seeds to it. Mix it and add salt, Ghee, Eatable Soda to it and mash it lightly. Now add water to it slowly at interval. Now knead it in well manner. By adding eatable soda and ghee to it, your dough will be little soft and will puff during cooking, Your dough is ready or not you can check it by  slightly pressing your finger on it. When it leave little impression of your finger to it then your dough is OK. Now make equal big lemon sized ball of it and stuffed it with its stuffing material discussed above. But note that stuffed material should not be come out. Now  press it little between your palms and roll it little on kitchen board. Thus rolled out each and every balls like this and keep it on a disc or plate.

 Cooking:-

     Take a Pan and heat it on medium heat on gas flame. When it becomes hot properly then put refined oil to it. When Oil starts heating then add one of your rolled stuffed balls to it. Now fry it well both side. You will see that it starts puffing and color become little golden brown. Now your delicious Daal Puri is ready.  Like this fry all rolled balls.  

 * Serve this hot with tomato sauce or potato veg curry. Enjoy it with your family and friends. It will be really a memorable moment.

 Delicious Bhindi (Okra) Masala


It is oftenly used in Indian kitchen as main course. It is simple and quick  recipe to cook and nutritious to health.

Ingredients:-

Bhindi- 250gm


Onion- 2 midium size (finely chopped)

Mustard(Yellow)  seed-2 table spoon gm

Garlic- 1 Pc.

Cummin seed

Red Chillie Powder

Green chillie - pc.

Turmeric Powder- 1 tea spoon

Salt- 1 table spoon

Mustard Oil - 50 ml

Tomato - 1 pc (finely chopped).

Procedure:-

* First of all wash the Bhindi and dry it in the air for few mins.Now diced  it into size of  about 2".

* Now grind the mustard and garlic  with green Chillie and make its paste and set it aside for further use. 

* Now heat a Pan on medium flame of gas. When Your Pan become heat then  put mustard oil to it. When oil become heat then add cummin seeds to it and let it splutter.

* Now add finely chopped Onion and Tomato to it. Now fry it till golden brown color. 

* Now add diced Bhindi (Okra) and fry it little for 2 to 3 mins. Now add the paste of ginger, garlic and Green Chillie and stirring this mixture continuously. 

* After few mins. about 2 mins. add Red Chillie powder, Turmeric Powder, and salt to it. 

* Now stirring regularly all these mixture on lower heat  for another 2 mins. and add 2 cup of water to it.

* Let  it to boil and after few mins. you will see that your bhindi is cooked.

* Now serve it hot with Chapatti or Rice.

(Green Pea) /Matar Paneer ki sabgi

Matar Paneer 


Cook time- 25 min.

Ingredients:-                   For 2 to 3 person        


Paneer - 200 gm
Potato- 2 pc.
Green Peas-250 gm
Red Chillie Powder  1 tea spoon
Garam Masala- 1 tea spoon
Mustard Oil - 50 ml
Onion - 3 to 4 medium size (Finely Chopped)
Green Chillie- 2 pc.
Ginger-1/2"
Garlic- 1 pc
Tomato- 1 medium size (finely chopped)
Cummin (Jeera)- 1 tablespoon
Salt--1 table spoon
Turmeric Powder- 1 table spoon
Bay Leaf (Tej Patta)- 2 Pc
Coriander Powder- 1 table spoon
Coriander Leaves- 1 table spoon finely chopped

Procedure

*  First of all boil the potatoes and peel it. Now diced it in the shape of small cubes and set it aside.

*  Now cut the Paneer in  the shape of small cubes and set aside. 

*  Now heat oil in a Pan on medium flame. When oil become heat then put Paneer cubes to it and fry       it till golden brown color. Now set it aside this fried Paneer cubes.

*  Now put cubed potatoes to  the heated pan with oil and fried it well. 

* Now grind the  finely chopped onion and green chillie with ginger and garlic together and set it           aside.

* Now again heat the oil in  the pan and add Cummin seeds and Bay leaves to it. Add  finely chopped   tomato and paste of  onion ,green chillie, ginger and garlic to this and  stirring is mixture regularly. 

* When it starts leaving oil then add salt, turmeric powder, coriander powder and red Chillie powder      to it and stirring this mixture continuously.

* Now add fried cubes of  Paneer, and fried cubes of potaoes to it.Now add green peas to this mixture   and stirring this mixture continuously for about 2 mins..

* Now add 2 cup of water to it. Now let it to boil and lower the flame.

* Let it boil for  about 4 to 5  mins. Now off your gas stove, 

* Matar Paneer is now ready. Now garnish it with washed and finely chopped coriander leaves.

* Serve it hot with Chapatti or Rice.

Steam Rice

 Steam Rice


Steam Rice is the important recipe which is cooked everyday in almost Indian houses. In some part of India it is used frequently as meal in day or night.


Cooking time -    12 min.

Ingredients:-       for 2 person          

Rice -          250 gm

Water -        400 ml




Procedure:-

* First wash the Rice in well manner. Now take a Pressure Cooker and add the washed Rice to it. 


* Now add water to it and cover the lid of Pressure Cooker. Now on the gas stove and put it on gas flame.

*  Heat the Pressure Cooker on medium flame. After about 8 to 10 mins. the Pressure Cooker will make whistle. 

* When Pressure Cooker will make 1 whistle then off your gas burner. And let it aside for few mins. (about 5 mins.). 

* Now open the lid of Pressure Cooker but be sure that steam of Pressure Cooker should come out automatically from it. Now your steam rice is ready.

* . Serve it hot with Daal or Vegetable. One can add Ghee and Salt to it. 

* After applying Ghee and Salt to  this cooked Steam Rice, It will become delicious and one can eat it without Daal or Vegetables.

*  Enjoy this recipe, it is very delicious and simple to cook.

Phulka (Chapatti)- Puffed Wheat Flour Bread

Phulka (Chapatti)


Total time-            10 mins.

Preparation time-   2 to 3 mins. Cook time - 7 min. 


Ingredients;-


Wheat Flour - 3 to 4 Big Spoon
Water-           150 ml
Ghee-            3 Table Spoon

Procedure:-

* First of all make dough of Wheat flour by adding water to it. Dough should be soft and pliable but not sticky.For this take Wheat flour in a big ball and  add a bit of water. Now knead it continuously by adding water as required till it becomes soft and pliable. You can test it that your dough is ready or not by just pressing your finger lightly on it, If it left  some impressions on dough then your dough is ready.

 

 * Now make  equal balls like big lemon size. Now sprinkle some wheat flour on it. Now roll it under palms of your hand and press little to flatten the ball. Now rolled out each ball on rolling board by using some dust of Wheat flour on it in the shape of a small  circle/dish.

 

 * Now heat the Tawa or Pan on your gas stove on medium heat. When Tawa become hot properly, then put your rolled ball of dough on it. Now cook  one side little or half cooked. Then turned it and cook other side in well manner. You will see  some brown spot on it. If brown spot starts visible then set aside your tawa and put your Chapatti (Phulka)  directly on fire, you will see that your Chapatti (Phulka) starts puffing. But note that you have to put Chapatti (Phulka)i on fire directly for only 3 to 5 sec.otherwise it will be burned. 

 

 

* Like this you have to cook all your Chapatti (Phulka) and after that applied Ghee on both sides of it. By applying Ghee, your Chapatti (Phulka) will become soft and more tasty. 

 * Serve it hot with vegetables or Daal.

Chan Masala

It is very nutritious, delicious and spicy dish of Indian kitchen.


Preeparation time-        12 min.
Cook time  -                 35 min.

Ingredients


Chick Peas-                     150 gm

Mustard Oil-                     50ml

Cummin Seed-               1 tea spoon

Cinnamon-                     1" (crushed)

Cloves-                          4 to 5 Pcs

Coriander Powder-        1 table spoon

Red Chillie Powder-      2 table Spoon

Salt -                              2 tea spoon (as per taste)

Onion-                           3 medium size (finely chopped)

Green Chillie-               3 to 4 Pcs.(finely chopped)

Red Tomato-                 1  pc.(Finely Chopped)

Ginger and Garlic Paste- 2 tea spoon

Turmeric Powder-         1 tea spoon

Procedure


          * First of all we should soak the chickpeas into water overnight or for at-least 6 hrs.before cooking. 

         * Heat a Pressure cooker on medium heat on gas stove and add Mustard Oil to it. 

     * Add Cummin seeds to it and add finely chopped Onions and Green Chillie to it and stirring it  for few mins. till golden brown color.

    * Add Ginger Garlic paste to it and stirring it continuously for about 1 min. and add chopped Tomatoes and fry these mixture for about 2 mins.

      * Now Add your soaked Chick Peas to this mixture and add Salt and Turmeric powder to it and stirring it for  few mins.

     * Now add your Coriander powder and Red Chillie Powder to this mixture and mix it well.

    *  Now add crushed Cinnamon and Cloves to it and stirring it for about 2 mins.

   * Now your Chana Mmasala is well fried and add little water about 2 cup to this mixture and cover the lid of Pressure Cooker and make it to whistle for 2 to 3. 

   * After 2 to 3 Whistle off your gas burner.

  * Now your delicious and spicy Chana Masala is ready to serve. Serve it hot with Rice or Chapati.

Time- 25 Min.

Ingredients:-          For 2 people

Eggs                                  04 pcs.(Boiled)

Onion                                02 (Finely Chopped)
Tomato                             01 (Finely Chopped)
Garlic                                04 to 06 flakes 
                                          (finely chopped)
Ginger                               01"Piece(finely grated)
Green Chillie                    02 (vertically diced)
Red Chillie Powder          02 Table Spoon
Coriander Leaves              02 stem
                                          (washed and finley chopped)
Turmeric Powder              01 Table Spoon
Coriander Powder             01 Table Spoon
Garam masala                   01 Table Spoon
Mustard Oil                      50 ml
Green Peas                       100 gm
Salt                                   2 Table Spoon
Cummin                           1 Table Spoon




Procedure:-

       * First remove the shell of boiled eggs and fry it in a Pan till golden color and set it aside for further use.

        * Now make a paste of Onion, Garlic, Ginger and Green chillie in a grinder. 

      * Heat Oil in the Pan and add Cummin  to it and add Onion, Ginger, Garlic and Green Chillie Paste to it and fry this mixture till golden brown color. 

      * Now add Red Chillie Powder, Turmeric Powder, Coriander Powder  and salt to it and mix it well. 

      * Now add Green Peas to it. Mix this mixture well and now add finely chopped tomatoes to it and fry it for few minutes and you will find that  it starts leaving oil.

     * Now add Garam masala to it and mix it . Then add boiled and fried eggs to it. 

    * Add 1 cup of water to it and let it bring to boil. Then reduce the flame of your gas stove.

   * After 2 to 3 min. off your Gas burner. Now garnish this Egg Curry  with finely chopped coriander leaves. 

  * Your delicious mouth watering Egg Curry is ready to serve. Serve it hot with Chapatti or Rice.

Goat's Mutton curry

Goat's Mutton Curry

Cook time- 50 min.


In winter season warm your dinner table with this delicious and spicy meat curry in Indian style.

Ingredients:-   Sufficient for 4 to 5 people


Meat                                   1 kg
Mustard Oil                       200 ml
Onion(finely chopped)      400 gm
Red Chillie Powder           3 to 4 table spoon
Fennel powder-                 2 table spoon
Ginger paste                      1 table spoon
Garlic paste                       1 table spoon
Cummin Powder -            1 table spoon
Cardamom Powder           1 tea spoon
Green Cardamom             2 pcs
Cinnamon stick -              2 pcs
Bay Leaves(Tejpatta)-      3 to 4 Pc
Cloves (Loung) -              3 to 4 Pcs.
Salt-                                  3 tea spoon
Turmeri Powder-             1 table spoon
Coriander Leaves (finely chopped)- 3 to 4 stem

Procedure:-


* Wash the Mutton  Properly. Heat Mustard Oil in a Pressure Cooker on medium heat on a gas stove. 

* Now put Cinnamon, Bay leaves, Green Cardamom and Cloves together with finely chopped Onion and add Salt to it. 

* Now fry this mixture till turning the color golden brown.Once color changed to golden brown then add Meat to it.

 * Now fry this up to about 10 to 15 minutes, you will see that color of Meat changed to brown. Once color of meat changed to brown then add little water about 1 cup to it and add  Red Chilies Powder and Turmeric Powder  to it.

 * After frying this mixture about 1 to 2 min. add Ginger and Garlic paste to it and keep stirring till you get a light red color.

 * After about 2 min. you will see that color is changed to red. Now peel and grind green Cardamom and add it to Mutton and sprinkle Cummin and Fennel powder to it. 

* Now mix all these mixture in well manner. Add 1 to 2 cup water to it and close the lid of pressure cooker. When  Pressure cooker makes  2 to 3 whistles  then off your gas stove.

*  Your delicious and spicy Mutton Curry is ready

.* Add finely chopped Coriander Leaves for garnish. Serve it hot with Rice or Chapatti.

Mango Pickle (Aam ka Aachar)

                                         Mango Pickle

       It is the important part of our Indian kitchen. It enhances the taste of food. One can say that Indian kitchen can not complete with this Pickle. Now I will give detail of this mouthwatering delicious recipe. But it is very important to note that you should not add water to this Pickle during its preparation.


Ingredients


Raw Mango                       1 Kg
Salt                                     100 gm
Turmeric Powder              50 gm
Fenugreek ( methi) seed  2 table spoon
Mustard seed -                 2 table spoon
Red Chillie                        50 gm
Fennel Seed (Saunf) -     1 table spoon
Coriander seed-              1 Table spoon
Mustard Oil-                   250 ml


Procedure:-


      * First of all wash and clean the Raw Mango and let this to dry. 

      * Now cut them along with seed in small pieces of about 2".

    * Now remove seeds from the pulp but be ensure that hard shell should be there in each piece inside. 

    * Now heat a Pan and add Fenugreek seed , Mustard seed, Red chilies, Fennel seed, Coriander seed and mix it well. 

    * Now take all these mixture into a bowl. Now grind these mixture in grinder.

    * Take a big bowl and add diced Mango pieces, grinded spice mixture, mustard oil, salt and turmeric powder and mix it well. 

   * Now take a dry big jar and put all these mixture in this jar.

  * Now add little mustard oil to this jar and mix it well with a big spoon and put this jar into sunlight for almost 1 week. 

  * Now your mouthwatering delicious recipe is ready to eat.
